It is imperative for everyone within your pub to follow good personal hygiene practices. This will prevent bacteria from spreading to food.
Staff should always wash their hands before preparing food (especially after having a cigarette break or going to the toilet).
- Always wash hands under warm running water.
- Apply anti bacterial hand wash or soap.
- Rub hands together for 15-30 seconds, paying particular attention to fingertips, thumbs and between the fingers.
- Rinse well under running water and dry thoroughly using a clean, dry towel.
Anyone involved in the preparation of food must wear appropriate clothing, i.e. chefs whites, whilst in food preparation areas. Click here for suppliers of kitchen wear.
Aprons help prevent dirt and bacteria and can be removed easily for washing.
Long hair should be tied back where possible and a hat should always be worn during food preparation.
Jewellery can collect and spread harmful bacteria (or even fall in the food). The only piece of jewellery that should be worn is a wedding band.
You should never eat, chew gum, smoke or touch your face or hair whilst preparing food.
Anyone within your team who has diarrhoea and/or vomiting should let you know immediately and either go home, or stay at home. They should not return to work until they have had no symptoms for 48 hours.
Cuts and sores must be completely covered with brightly coloured, waterproof dressings.

1. Keep a log of events if things go wrong, what did you do?
2. Make sure all food handlers are trained on these practices.
3. Make sure you have somewhere for your team to change and store their outdoor clothes.
