Liqueurs

A compounded spirit made with spirit, flavourings, sweeteners and often colour.

Flavourings- 3 methods

  • the spirit may be distilled with a chosen flavouring
  • the flavouring may be steeps in the alcohol for a period of time (maceration)
  • the alcohol may be pumped over the flavouring (infusion)
  • Herbs- Creme de Menthe, Green/ Yellow Chartreuse, Benedictine, Drambuie, Glayva
    Citrus Fruit- Grand Marnier, Curacao (Cointreau)
    Stone Fruit- apricot, peach or cherry brandy (flavoured with the fruit not distilled from it)
    Kernels or beans- creme de cacao, Tia Maria, Kaluha
    Cream- branded cream liqueurs

    Liqueurs are sweetened unlike fruit spirits.
