ONE OF THE BIGGEST INFLUENCES ON DRINKS CHOICE IS VISIBILITY; STUDIES SHOW THAT YOUR BACK BAR DISPLAY WILL HAVE A FINANCIAL IMPACT ON YOUR BUSINESS
IF IT CAN’T BE SOLD OR IS USED TO SELL PRODUCTS TAKE IT OFF THE BACK BAR

The area behind the bar will attract customers’ eyes while they are waiting (not too long though!), making it the ideal location to sell your products to a receptive audience. The back bar can significantly enhance profits when utilised properly, people tend to buy what they can see so don’t fall into the trap of stuffing it with useless memorabilia and glassware.

  • Seasonality- make sure that the products on your back bar suit the time of year for example cider and Pimms in the summer, mulled wine and real ales in the Winter.
  • Customer preference- make sure that you are displaying products that your customers are interested in particularly any new products that they may have seen advertised.
  • Suppliers will often provide tools to merchandise their products more effectively and improve the look of your bar
  • Merchandise complimentary products together
  • Never have empty shelves, if a product is out of stock, put another one in its place
  • Display items that reinforce the quality of your offering eg: fresh fruit, lots of fresh ice
  • Change- refresh your back bar display regularly so that your customers are encouraged to look around your product range
  • Your back bar also includes your staff, make sure that they have the knowledge that they need to sell products
